Banana cake
Recipe by Barb Cook, Pea Ridge, in the 2008 Cook's Library of Treasures published by the Pea Ridge Community Library
2 1/2 c. flour
1 1/2 c. sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. shortening, melted
1 c. mashed bananas
2/3 c. sour milk or buttermilk
2 eggs
1 tsp. vanilla
Combine first five ingredients in a large bowl. Add shortening and bananas. Beat at low speed of mixer until combined. Add milk, eggs and vanilla; beat for two minutes on medium speed. Pour into two round, greased and floured pans. Bake at 350º for 30 minutes.
